Spice Cup #17 Ajam Peniki - 100g
Ajam Peniki is an Indonesian dish of stewed chicken in a spicy coconut sauce.
Warm flavours of onion, ground chili peppers, garlic, lemongrass, coriander and ginger
Fry the 600g chicken until golden brown on all sides. Remove the meat from the pan
Heat 2 tablespoons of oil in a pan again and add the ajam peniki mix. Sauté briefly to release the aromas.
Add the chicken back to the pan along with the 200g coconut milk, 50 ml of water, and salt to taste.
Bring to a boil, then simmer over low heat uncovered. Stir occasionally. Allow the liquid to evaporate slowly. The sauce will thicken and cling to the chicken. This takes about 30-40 minutes. Stir well at the end to prevent burning.
Serve with rice, prawn crackers, and lime wedges. Top with the seroendeng.
